Banana cupcakes with cream cheese frosting. Made by Wendy Ewing

Salted caramel, triple chocolate, black forest, sugar free carrot, chocolate fudge, maple, peanut butter chocolate and golden vanilla. These are some of the cupcakes our Advertising Manager Wendy Ewing has whipped up for staff birthdays over the last year. She takes requests “because the birthday person always gets what they want” and never fails to surpass our expectations of what it means to have a favorite flavor combination.

Today is Advertising Representative Kelly Malone’s birthday and she requested banana cupcakes with cream cheese frosting. Wendy had never baked banana cupcakes and was skeptical that they would turn out well, but – of course – she managed to pull it off. It’s currently 10:15 a.m. and already five cupcakes have mysteriously disappeared.

“It’s just a fun thing to do and everyone likes cupcakes,” Wendy said of her decision to start the office birthday tradition. “I started baking when I was five with my grandmother … and I just love it. I think it’s because I’m kind of a nerd and baking is a science.”

Baking also allows Wendy to express her creative side. Every cupcake comes in flawlessly frosted and decorated in some way – sugared pecans to adorn the maple cupcakes, a caramel drizzle on the salted caramel and a golden tinge on today’s concoction.

We are lucky to have Wendy in the office for many reasons, but her baking skills are … well, the icing on the cupcake.
